A smooth, delicate dish made by gently cooking and kneading white miso with kudzu starch to create a tofu-like texture, finished
with a touch of fresh wasabi on top.
◆ Simmered Duck Breast
Tender duck breast gently simmered to retain its juiciness, offering a rich flavor and smooth texture.
◆ Awa-fu Dengaku
Grilled millet wheat gluten topped with a savory miso glaze, highlighting its firm texture and rich flavor.
◆ Miso-Pickled Aomi Daikon
Aomi Daikon is a traditional Kyoto heirloom vegetable—small, slender, and lightly green-tinted.
